 My favorite miso soup

<Introduction>

I had been eaten the miso soup made by my mother using sweet potatoes since I was a child. But I’m living alone now. So I can’t eat the miso soup. When I started to live alone, my mother taught me how to make it. And now, I can cook it well! Then I would like to show you a recipe that the dish I feel nostalgic.

・The history of miso soup

In the Kamakura period, under the influence of the monks came from China, mortars came into use. And when miso grains were grinded, they were easily dissolved in water and used as miso soup. 

In the Muromachi period, the production of soybeans increased and farmers began to make homemade miso, and miso became popular as a preservative food for
miso became popular among the general public as a preservative food.

・Basic kitchen knife

・Cutting board

・Soup Ladle

・Cooking chopsticks

・Miso soup bowl

・Mesuring cup

・Mesuring spoon

 

Ingredients(2 servings)

・water 300ml

・chicken thighs 200g

・sweet potatoes 100g

・enoki mushroom 100g

・pasted miso 1 tablespoon

・powdered dashi of frying fish 1 teaspoon

・chopped green onions a pinch



Steps

1. Cut sweet potatoes into half-moon slices. And cut chickenthighs into bite-sized pieces.





2. Cut the enoki mushroom into 10cm pieces.



3. Place water and powdered dashi of frying fish in the pot. And heat over medium heat until it comes to a boil.



4. Put the cutting chiken thighs  and sweet potatoes in '3'. Then cover it and boil for about 5 minutes.



5. After the chiken thighs and sweet potatoes are cooked, put the cutting enoki mushrooms in '4'. When they become soft, dissolve the miso in it.




6. Pour the miso soup into the bowl.

7. Then top the miso soup with the chopped green onion.



8.  It's ready to eat!

This recipe is recommended to make when you feel like eating light meat, especially for breakfast. It is also recommended to make this as an arranged menu when you are tired of your usual miso soup. If you want to make pork miso soup, you can easily make it by changing the meat in this recipe to pork. Also, if you want to make it Western style in seasoning, you can make it by adding consomme instead of miso.
